How to sharpen (double-edged)

1) Flatten a whetstone

First, check if the surface of the grinding wheel is flat.

If the grinding surface is not flattened, it won't hit the edge of the knife, so you need to flatten the grinding wheel with a grinding wheel for face fixing.

2) Sharpen one side at a time

After flattening, sharpen the knife one side at a time.If the grinding wheel is moving, it will be fixed by laying a cloth underneath.

Hold the handle firmly with your dominant hand and support the knife with your thumb and forefinger so that it doesn't shake.

Hold down the tip of the knife with the index finger and middle finger of the other hand, and raise it a little so that one or two coins can fit in. When you press it down, it feels like you're applying force. (You can grind under the finger that suppresses the tip of the knife, so move your fingers little by little.)

3) Sharpen the other side

Overall, if there is a return on the edge of the knife, it is proof that it is sharpened properly, so if that happens, turn the sharpening surface upside down and sharpen it with the same technique (the hand holding the handle does not change left or right).

4) Finish sharpening (only those who use finish sharpening)

On the other side, if the edge of the knife is returned as a whole, if there is a finishing abrasive, it can be sharpened by raising the angle a little more than before, so if there is no finishing abrasive or if there is no finishing abrasive, it can be rubbed lightly with a newspaper.

If you have a rough whetstone, a medium whetstone, and a finishing whetstone, repeat ②③ with a rough whetstone, repeat ②③ with a medium whetstone, and ④ with a finishing whetstone.
